January has not been a good month for blogging.  It’s the high season in the Caribbean and we’ve had lots of visitors.  Every time I’ve tried to cook and blog about it I just can’t seem to find the time to put it all together.  I’m forcing myself today to put up what I just made for lunch.  I don’t cook pasta all that often, but when I do, I always enjoy it.  This a great lunchtime dish, for me it’s pre-gym workout fuel.  This dish has a good balance of carbs and protein to get me through the next hour or so of lifting.  In the words of Eric T. Sunday Lunch in the Hills

We had a chance to get out of town yesterday and go over to a friends house for lunch.  They put out quite an amazing spread.  Off the grill we had chimichurri marinated churrasco, sausages, and chicken thighs.  All accompanied by sweet peppers with feta and olive oil, potato gratin, Mediterranean salad and more.  Delicious.  Dessert put me into a coma.  I remember a torta de tres leches, a pear crumble, and the rest is a blissful blur.  It’s important to have friends with good taste!

Now off to make another pizza.

Quick Granola Protein Bars

With all of this cooking, eating, and blogging I’ve been hitting the gym pretty hard lately.  I’ve been upping my protein intake but it’s not always an easy task on the go.  I’m pretty tired of $%^& brick protein bars and granola bars that taste like kids breakfast cereal.  Also, any decent store bought package tends to cost a fortune.  I decided I’d give making a simple granola bar with the addition of some protein a chance.  So far so good.  These are really easy to make and delightfully crunchy. Getaway Grill Out “The Art of Asado”

We had a chance to get away this weekend.  Once we arrived at our destination and saw the opportunity to fire up a grill, I made a quick stop at a local market.  Grilling is one of my favorite ways to cook.  It’s very social and everything tastes amazing with a little fire underneath it.  Origins of “The Art of Asado” are as follows: man made fire, man dropped food in fire, food tasted better, man made grill and bought a cooler full of beer, the end.
