January has not been a good month for blogging. It’s the high season in the Caribbean and we’ve had lots of visitors. Every time I’ve tried to cook and blog about it I just can’t seem to find the time to put it all together. I’m forcing myself today to put up what I just made for lunch. I don’t cook pasta all that often, but when I do, I always enjoy it. This a great lunchtime dish, for me it’s pre-gym workout fuel. With all of this cooking, eating, and blogging I’ve been hitting the gym pretty hard lately. I’ve been upping my protein intake but it’s not always an easy task on the go. I’m pretty tired of $%^& brick protein bars and granola bars that taste like kids breakfast cereal. Also, any decent store bought package tends to cost a fortune. I decided I’d give making a simple granola bar with the addition of some protein a chance. So far so good. These are really easy to make and delightfully crunchy. Continue reading
