“Carolina-Style” Pulled Pork

I’ve been making pulled pork for years now.  All you need is a nice piece of pork and a little time to spare.  Sounds simple, right?  Well, it can be.  Many BBQ enthusiasts will spend an entire day cooking their pork and making sauce that even family members are sworn to secrecy over.  A while back, I watched a friend make his family recipe Carolina BBQ sauce.  He wouldn’t let me know any of the ratios, but since I bought the ingredients, at least I knew what went in the secret sauce.  I’ve played around with it for years, and now here is my take on Carolina pulled pork.  (Carolina-style is mustard and vinegar based.  If you don’t like either of those flavors skip the sauce recipe). Getaway Grill Out “The Art of Asado”

We had a chance to get away this weekend.  Once we arrived at our destination and saw the opportunity to fire up a grill, I made a quick stop at a local market.  Grilling is one of my favorite ways to cook.  It’s very social and everything tastes amazing with a little fire underneath it.  Origins of “The Art of Asado” are as follows: man made fire, man dropped food in fire, food tasted better, man made grill and bought a cooler full of beer, the end. Chicken and Pumpkin Curry Empanadas

Ever since a trip to Argentina I’ve had a slight obsession with empanadas.  They can be the perfect on-the-go snack when short on time (or late for work), you can fill them with anything you want, and they’re not difficult to make.  With that being said, this is not the easiest empanada recipe I’ve ever done, but it does produce a tasty turnover.  Also, this is originally a vegetarian curry recipe, omit the chicken if you want to keep these bad boys veggie.  With all Indian recipes, I recommend grinding your own spices whenever possible.  Makes 24 empanadas.
