“Beefcake” Pasta Salad

January has not been a good month for blogging.  It’s the high season in the Caribbean and we’ve had lots of visitors.  Every time I’ve tried to cook and blog about it I just can’t seem to find the time to put it all together.  I’m forcing myself today to put up what I just made for lunch.  I don’t cook pasta all that often, but when I do, I always enjoy it.  This a great lunchtime dish, for me it’s pre-gym workout fuel.  This dish has a good balance of carbs and protein to get me through the next hour or so of lifting.  In the words of Eric T. Cartman, “Beefcake!”

What you need:

1 Pound Ground Beef

2 Cups Mixed Pasta (penne, rotini, shells)

1/2 Large Green Bell Pepper, diced

1/2 Large Yellow Onion, diced

1 Large Tomato, diced

4 Cloves Garlic, minced

2 Tbsp Olive Oil

1 Tbsp Mixed Italian Herbs

1 Tsp Crushed Red Pepper Flakes

Sea Salt & Black Pepper

Splash of Red Wine

How to do it:

Start by boiling water in a medium saucepan and cooking 2 cups of pasta until al dente.  While the pasta is cooking, brown the ground beef in a skillet (7-8 minutes), and prep the vegetables and garlic.  When the beef is browned, drain the excess fat, remove and set the beef aside.

In the same skillet, heat 2 Tbsp of olive oil, add garlic and stir for a minute.  Next add the onions and peppers, cook for 3-4 minutes.  Stir in the tomatoes and beef, season with salt, pepper, red pepper flakes, and Italian seasoning.  Add a healthy splash of red wine, simmer for 5 minutes, then add to the pasta in a large bowl.  Serve topped with Parmesan cheese and you’re good to go.  Cheers
