The Key to a Great Green Bean Casserole

Thanksgiving is only a few days away.  I’ve seen so many fantastic posts from fellow bloggers gearing up for this weeks foodie fest.  I didn’t cook Thanksgiving for the past couple of years, though I did contribute a couple pans of green bean casserole, so I don’t have any great wisdom to bestow on anybody except for this one offering.  If you’re going to make a green bean casserole this year, fry your own onions!  It can be done ahead of time and makes a massive difference.  I also made a spicy casserole last year, adding fried jalapeños into the mix, amazing.  Here’s a quick guide of how to make some fried onions (or jalapeños):

3 Medium Onions, sliced into half rings

1 Cup Flour

1 Cup Milk

Slap Ya Mama Hot Cajun Seasoning

Vegetable Oil

Slice the onions and soak in milk for at least 5 minutes.  Mix the flour with 1 Tsp of Cajun seasoning.  Using a container (with lid), in batches place the onions with a few Tbsp of flour/Cajun spice mix, toss to coat.  Using a deep fryer, dutch oven, saucepan, heat the oil to medium high and fry the onions in batches until golden brown.  Drain on a paper towel and add a dash of the Cajun seasoning.

I suggest making a double batch, because you are inevitably going to taste a few (for quality control) and then keep eating them as they are awesome.  As always use caution when deep frying anything.  I highly recommend trying the fried jalapeños.  I used the pickled variety, you can get a massive jar at Sam’s Club for a few dollars, or buy’em fresh.  Cheers.

  1. Hey! this recipe is similar to what we call onion pakora in india. Instead of the cajun seasoning, we use red chilli powder. I feel like having some after seeing your photograph 🙂
