Accidentally Awesome Pizza

Last night I made an amazing pizza.  Now pizza that you make yourself always tastes amazing, but this one had something special.  I’ve made hundreds of pizzas, and somehow this one rose above the pack.  With the exception of some photos I didn’t bother documenting it… mainly because I was tired and couldn’t be bothered, I just wanted food.  I remember coming home from work hungry, and thinking that I really want a bbq chicken pizza right now.  I didn’t have any bbq sauce, but we did happen to have some dough leftover from making a pizza two days before.  It was brilliant.  Afterwards I wrote down what I remembered doing, knowing damn well that I didn’t measure anything.  If anything this is for me to remember what made this so special. 

Sauce

1/2 Can (8oz) Tomato Sauce

1 Tsp of Siracha

1 Tbsp of Ketchup

Dash of Pickapeppa Sauce

Dash of Soy Sauce

Mix all of the ingredients together in a bowl.  Taste and adjust to your liking.

Chicken:

1 Small Chicken Breast, diced.

1/2 Small Onion, sliced

1 Clove Garlic, minced

1/2 Tsp Chipotle Paste

Freshly Ground Black Pepper

Dash of Cumin

Dash of Adobo Seasoning

Heat a small frying pan to medium heat with a Tbsp of vegetable oil.  Add garlic and diced chicken.  After 5 minutes add onion, chipotle paste, and seasonings, cook for another 5 minutes.

Accidentally Awesome Pizza

Pizza Dough  (Dough is adapted from a quick easy pizza dough recipe.  Difference being I used sea salt, let it rise twice, and left the dough in the fridge for 2 days.  The recipe makes 2 pizza crusts).

BBQ Chicken (from above)

1 Jalapeño, sliced thinly

3 Cloves Garlic, sliced thinly

1 Cup of Shredded Cheese – Mozzarella/Cheddar Blend

Roll the pizza dough out thin, pre-heat the oven to 450.  Place the dough on a non-stick baking sheet (un-greased) and bake for 5 minutes.  Remove from oven, top with sauce, then cheese, chicken mixture, and finally with the garlic and jalapeño slices.  I made this pizza a half and half.  The jalapeños were for me.  Boom.

The thin crust was absolutely perfect, more than likely the result of essentially a triple rise (3rd in the fridge).  The garlic was present, but not overwhelming.  The cheese I had wasn’t even close to the highest quality, but it worked just fine.  And then there’s the sauce… definitely something special to it.  This is the first time I’ve used Pickapeppa.  I will definitely be experimenting with it in the future.  I hope you treat yourself to a homemade pizza sometime soon.  Don’t forget to make some extra dough, and then forget about it until a few days later.  Cheers.

    The restaurant where I work makes a pizza they call the Dalai Lama (make me one with everything), which is a pesto based veggie pizza. I add chicken to it, and yesterday had them add fresh sliced jalapenos. SO GOOD. It inspired me to try cilantro jalapeno pesto; care to beat me to it?

    • I’m going to have to spend some extra time at the gym if I keep making more pizza! That does sound pretty excellent. I’m waiting on our basil and cilantro plants to grow a bit before I can start hacking them down.

  6. I love making my own pizza – throwing on all sorts of wonderful ingredients and super fresh! A favourite tip I picked up in Spain years ago – throw some arugula on straight out of the oven. A massive burst of flavour and fresh. I haven’t tried the twice baked shell before…an experiment for my next batch!

    • There is a pizza/focaccia joint I used to visit in Miami that made great pizzas with arugula! Sadly it’s hard to find where I live. Happy Turkey Day. Cheers.

  8. I’ve got the dough I made this morning in my fridge and am making your BBQ Chicken pizza tonight! I’ve never made dough before…..but I played with it a few times, worked it, and it seemed to be doing what it’s supposed to do.
