With all of this cooking, eating, and blogging I’ve been hitting the gym pretty hard lately. I’ve been upping my protein intake but it’s not always an easy task on the go. I’m pretty tired of $%^& brick protein bars and granola bars that taste like kids breakfast cereal. Also, any decent store bought package tends to cost a fortune. I decided I’d give making a simple granola bar with the addition of some protein a chance. So far so good. These are really easy to make and delightfully crunchy.
1 1/2 Cups Rolled Oats
1/2 Cup Coconut Milk
2 Scoops Protein Powder, Vanilla Flavored (Body Fortress Advanced Whey)
1 Cup Deluxe Mixed Nuts Crushed/Smashed
Mix all ingredients together in a bowl. Preheat oven to 350. Spread on baking sheet (use rolling pin) and bake for 20 minutes. Allow to cool and then cut to desired size/shape. This does not taste sugary, it has a hint of vanilla and some sweetness. Add some honey or agave nectar before baking for a sweeter bar. You could easily throw some raisins or dried fruit in as well.
