Simple Coconut Rice

This is a really easy rice dish that goes well with a lot of types of cuisine.  I’ve been eating this lately with Caribbean and Indian food.

2 Cups Rice

2 1/2 Cups Boiling Water

1 Tbsp Vegetable Oil

6 Whole Cloves

3 Allspice Berries

1/2 Stick Cinnamon, broken up

1/2 Cup Coconut Milk

Sea Salt to Taste

In a medium saucepan heat oil, add spices, and sautee for 2 min.  Add rice, stir for 1 minute, then add boiling water.  Cover and cook until rice is ready (~15 min).  Stir in 1/2 cup coconut milk, add salt to taste and serve.  This is great served with Caribbean Pork and Coleslaw!
