Quick & Easy Carne Asada Tacos w/ Habanero Salsa

It’s lunch time and I’m in a rush.  I finished off the empanadas so I’m making a quick easy favorite.   If you skip making the salsa this can be made in under 10 minutes.  If the words Habanero and Jalapeño scare you, you’re reading the wrong blog.

For the Tacos:

1 Pound Lean Beef (top sirloin or equivalent 1/2-3/4 inch thick)

1 Medium Onion, sliced

1 Green Bell Pepper, sliced

Chili Powder (Mexican variety)

Adobo all-purpose seasoning

Garlic Powder

Freshly ground black pepper

Corn Tortillas

Lime wedges

Habanero Salsa:

1/2 Medium Onion

1 Jalapeño (seeds and stem removed), chopped

1 Can Diced Tomatoes

1 Habanero (stem removed)

1 Tbsp White Vinegar

2 Cloves Garlic

Juice of 1/2 Lime

Pinch of Cumin

Sea Salt to taste

Start by heating a tbsp. of olive oil in a large non-stick pan.  When hot, add onions and peppers.  While cooking the veg, season the steak by rubbing equal parts of cumin, chili powder, garlic powder, black pepper, and adobo into the meat on both sides.  Add the beef to the pan and sear on both sides (cook ~2 min. each side for med. to med. rare).  Allow the beef to rest on a cutting board and make the salsa.

For the salsa take the habanero, vinegar, lime juice, and garlic and blend until liquified (I use a Magic Bullet style mini-blender).  Add the onion, jalapeño, tomatoes, cumin, and sea salt and pulse briefly.  Boom, that was easy.

Heat your corn tortillas either in a skillet, over a grill, or just nuke the things for 20 seconds.  Cut the beef to desired size (strips, cubes, whatever!) place on the tortilla, add onions & peppers, and garnish with salsa.  Of course you can top these bad boys with anything you feel like: lettuce, cheese, sour cream, cilantro, Doritos if you’re a Taco Bell junkie.  For these I like just some shredded cheese and a squeeze of fresh lime.  Enjoy!
