Happy Friday. As I mentioned before, my “fowl beast” was 21 pounds… for 4 people. I’ve eaten more turkey this past week than I have in the last few years combined. Now, I’m not complaining, that bird was delicious. We’ve had turkey sandwiches, turkey tikka masala, turkey jalfrezi, just to name a few. Yesterday, I needed something quick and healthy for lunch before heading off to the gym. I had my camera nearby so I documented this one. These are really easy, and taste amazing. Finish off the rest of that bird with a little Tex-Mex flair.
Turkey Tex-Mex Lettuce Wraps
1/2 Pound Leftover Turkey, shredded or diced
1 Medium Onion, sliced
6 Leaves Romain Lettuce
1 Tsp Mexican Chili Powder
1 Tsp Adobo Seasoning
Pinch of Cumin
Garnish
Shredded Cheese
1 Green Onion, diced
Heat 1 Tsp of vegetable oil in a medium skillet. Add onions, sautee for 5 minutes, add turkey and seasonings, cook for another 2-3 minutes. Clean the lettuce leaves, add the turkey/onion mixture, and garnish with cheese, salsa, and top with green onions.
If I had a bell pepper on hand I would have put half of it in with the onions. Oh well. Treat this like any other taco, do whatever makes you happy! Cheers.
